I was at the coin shop and she kept asking me what years i wanted like it mattered but i really didn't care so i said 2008 or the cheapest ones. She ended up giving me some 91` 94` 90`ones.
So is one better than the other? Is one worth more? Whats the difference?

Years and mints matter to collectors. The only year that matters relevant to bullion is 1996...it carrys a much larger premium because comparatively so few were minted.
If you're buying to hold bullion then the dates don't make any difference...unless you can get some '96's cheap, then grab them but lable them and keep them separate from bullion items.

Don't pay any extra for SAE's of a particular date. 1996's are about double all other dates with few exceptions.
I buy whatever is available. Cheapest. In front of me.
Just make sure they are real Silver American Eagles and you will do fine!
.999 fine, that is,

One more question, does it matter if you touch them? Do you have to keep them all nice and pretty does that make a difference how much someone will pay you for them or what.

This is MY humble advice. If they are un-circulated, avoid touching the flat surfaces, encapsulate them and maintain their pristine condition, this will keep them as sale-able as possible.

In the original tube, in the box, still strapped and sealed inside.
That is as good as you can keep them.
Absent the Monster Box, just keep them in tubes. And don't look at them. That scuffs em up.

I must confess. I have a nice Walker in my pocket. I have a couple eagles in the desk. I like to take one out and hold it. My Preciousssssss ....... Gollum.
Actually I cut myself on glass in the garbage and put that one Eagle on my thumb until the bleeding stopped. No idea whether the silver did anything, but there was no infection. The only other treatment was a little honey on the wound, if you must know.

It seems a good idea to have a piece or two just to hold and experience at close quarters. Silver does have antiseptic properties, too, I hear.

As I've mentioned in a much more recent thread, silver has significant antimicrobial properties that were known centuries ago. People used to drop a silver coin into containers of milk or water to keep them fresh longer.
